A&T GRADUATE STUDENT WINS NATIONAL AWARD

GREENSBORO - Kendra Mathews, a graduate student in the School of Agriculture and Environmental Sciences at North Carolina Agricultural and Technical State University, earned a runner-up certificate of merit in the 2002 Institute of Food Technologists Product Development Graduate Paper Competition.

The Institute of Food Technologists' Annual Meeting, held in Anaheim, Calif., attracted nearly 20,000 people from universities, agencies and companies throughout the country. More than 1,500 papers were presented during the meeting.

Mathews' paper, "Development and Sensory Acceptability of Peanut-based Fish Nuggets," earned her a position among five finalists for the Product Development Division Graduate Student Paper Competition. Her advisor is Dr. Mohamed Ahmedna, an assistant professor in A&T's Department of Human Environment and Family Sciences.

In 2001, then-A&T graduate student Carlyn Ray won first place in the same competition. Ahmedna was also her advisor.
