GREENSBORO - Two graduate students from the department of human environment and family sciences at North Carolina Agricultural and Technical State University presented papers at the annual meeting of the American Society for Microbiology in Salt Lake City.

Jewell Carr, from Wilmington, N.C., presented "Viability of bifidobacteria in commercial yogurt products in North Carolina." In this paper, Carr explored incorporating viable cells of bifidobacteria, natural flora in the human intestinal tract that control the growth of foodborne illness, into yogurt. Working with Carr were Drs. Salam Ibrahim, Chung Seo, Mulumebet Worku and Abolghasem Shahbazi of the A&T School of Agriculture and Environmental Sciences.

Santosh Dharmavaram, of India, presented "Synergistic Effect of Origanox and bifidobacteria in controlling Escherichia coli 0157:H7 in Ground Beef." In this paper, Dharmavaram discussed the synergistic effect of spices and bifidobacteria on E. coli O157:H7 in ground beef.

Ibrahim, Seo and Shahbazi also worked with Dharmavaram.
